Peru Elver Coronel — Natural

In the village of La Flor del Norte, in Cajamarca's Huabal district, Elver Coronel farms just two hectares — a small but exacting operation. Elver came to coffee from an unlikely start as a ginger trader in the Amazon; today he buys ripe cherry from his neighbours and processes it centrally, paying farmers immediately and in cash. The high, cool, humid climate of La Flor matures the cherry slowly, building the depth this cup is known for.

For the natural, cherries are floated in tanks right after picking to sort for density, then dried whole on raised beds for 25–35 days — slow drying that layers sweetness and body onto the fruit. We freeze-dry the brew into crystals, so the cup lands in seconds, cold or hot.
