Colombia Rio Negro — Bourbon Aji · Lemongrass Co-Ferment

This lot comes from Rio Negro, in the Oriente Antioqueño of eastern Antioquia, Colombia. Volcanic soils, steady rainfall and altitudes of 1,700–1,900 m make for cool, slow-ripening conditions that build complexity in the cherry. Rio Negro was long known more for flowers and farming than for coffee; as Colombia's specialty scene has grown, its producers have leaned into micro-lots and experimental processing to stand apart.

Here that means a lemongrass co-ferment: the cherries are fermented alongside lemongrass, layering bright citrus and herbal notes over the coffee's natural sweetness. We freeze-dry the brew into crystals, so the cup lands in seconds, cold or hot.
